Root Vegetable Wedges

Most people who have worked with me for Functional Nutrition love their French Fries! This recipe was created to give those who are just starting their journey into healthy eating, as something to replace those fries with!

Ingredients
  

  • 2 Large Carrots
  • 2 Large Beetroots
  • 2 Large Sweet Potatoes
  • 2 Tbsp Coconut Oil
  • 1/2 Tsp Turmeric Powder
  • 1 Tsp Curry Powder or anything similar of your choice (I use FabIndia Garlic Parsley)
  • Finely Chopped Parsley
  • Freshly crushed Pepper
  • Salt to taste

Instructions
 

  • Peel and chop all vegetables like French fries or chubby wedges. In a cast iron pan, add the coconut oil. Add the vegetables, turmeric, salt and seasoning. Cover and cook on low, tossing every few minutes. It may take 10 minutes-20 minutes, based on how thick the vegetables are cut and how heavy bottomed your pan is. It’s really a no fuss recipe and I simply chuck it all in and forget about it while I do other things. When it looks crisp and roasted, add pepper and parsley and serve fresh.
