Soak the almonds for few hours. Peel and grind them smooth with very little water. Add more water to make a glass of almond milk. Many almond milk recipes call for filtering out the almond meal. I don't do that.
Cook the sweet potatoes, yellow pumpkin and carrots together until soft and refrigerate until chill. I usually do this the day before or a few hours ahead.
If you have the cooked vegetables and almond milk ready, then when you are just about ready to have your sunshine smoothie, blend all the ingredients together and have it fresh! If you need a little more water, you can add that. I like this one more thick.
